Litchfield National Park to the south southeast of Darwin about an hour and a half by bus was named for one of the early explorers of the Northern Territory, Indian-born Frederick Henry Litchfield (1832-1867). Something of an impoverished cast-about, Litchfield in 1864 found himself in the Northern Territory. Here he came into his own as an explorer. Litchfield had earlier tried his fortune as a gold digger in the Victorian Goldrush, and thus he was quick to recognize gold deposits at the Finnis River near what is today Litchfield National Park.. This news drew many immigrants to the North and thus Litchfield's find put down the foundations for the present-day Northern Territory and the city of Darwin. The wonderful park is thus fittingly named for him.
The Golden Greville is found all over northern Australia (especially Queensland and the Northern Territory), but at this time of the year it blossoms especially profusely in Litchfield National Park. Its vivid golden-orange draws anyone's eyes. Even more fascinating is that these flowers literally drip with nectar. You can just make out some sparkles. I didn't see the birds that favor this sweet, but my own hands were sticky from the drops.
To Joseph Banks (1743-1820), famous naturalist and philanthropist, goes credit for first collecting our Grevillea in April 1770 as a member of the team of scientists of Captain Cook's ship "The Endeavour" in Botany Bay. A second collection was made in June near Cooksville. It has also been known by the apt but botanically curious name 'Grevillea chrysodendron' ('Gold-Tree Grevillea').

When our friends from Calgary visited 2 years ago we went to the Great Barrier Reef on a smaller vessel, the Rumrunner. I have been to the Barrier Reef a lot of times but this trip was by far the very best one I have done on a tourist boat. Beside that, it was half the price of the others and the service and value for money was double anything else. The Rumrunner departs from the beach at Cape Tribulation and people are taken from the shore to the Rumrunner by a small transport boat.

In this photo the beach you see is the true Cape Tribulation beach. This is pristine Australia. Cape Tribulation is in the Daintree National Park and in my opinion is my favourite area so far in Australia. I still love Moorea and Maui but I can't live there because I am not the right nationalities.

The peak you see in the distance is Mt Sorrow, named by Captain James Cook, as was Cape Tribulation, for is was a bit offshore from here he holed his Endeavour on the Reef and had to limp into a river named today, the Endeavour River where Cooktown is.

The whole of the Cape Tribulation area is where they say, "The rainforest meets the sea." The photo was taken about 8 am I think it was.

One of my favorite bread recipes so far. This has just a hint of sweetness, but not much. The nutmeg adds a nice flavor. It's also really good subbing maple syrup for the honey. That's what I normally do and I actually like it better that way. =) You can also sub cinnamon for the nutmeg if you'd prefer. The recipe calls for bread flour, but I nearly always use regular nonbleached white flour or a mix of that and whole wheat pastry flour with great results. Use whatever you have on hand.

Haitian Bread

1 cup warm water
1 1/2 Tbsp vegetable oil
3 Tbsp honey or 100% maple syrup
1/3 tsp salt
1/2 tsp nutmeg or cinnamon
3 cups bread flour
2 tsp yeast

If you're using a bread machine, layer the ingredients in the order above and bake on the white/sweet bread setting with a light/med crust.

If making yourself... Activate the yeast by placing into a bowl/measuring cup with the warm water and honey/syrup. While that bubbles, combine all dry ingredients in large bowl, add yeast mixture and oil and mix until it forms a ball (may need to add a bit of flour or water for correct consistancy). Turn onto floured surface and knead. Form ball and place into large greased bowl and cover, allowing to rise until double in size (an hour or so depending on the temp). Punch down and form into desired shape (loaf, rolls, breadsticks). Place into greased pan and allow to rise until doubled again.

Preheat oven to 350 degrees. Bake 20-35 minutes until golden brown. Time will vary depending on your oven and the size/shape of your dough.

The Brown Butter Cookie Company makes first-rate baked goodies, especially their Brown Butter Sea Salt cookie line (the Original, the Cocoa, and the Espresso were all excellent; the Mint, less so), and their gooey, chewy Salty Honey cookies. What was hilarious to us is that you walk into this tiny unassuming shop and there's this assembly line of bakers right there! Like, I don't know, Oompa Loompas or something. Anyway, they make delicious cookies here at Brown Butter, and feed you samples even if you say "no", and we bought enough to last us the whole trip.

Two of THE easiest cookie treats to make at Christmastime -

Peanut Butter Kisses: any peanut butter cookie mix - follow package directions, and plomp a Hershey's chocolate kiss into the middle as soon as they come outta the oven. We are going to make a batch with chocolate chip cookie batter, sans chips, and use the kisses, for my oldest to take to HIS school later this week. He didn't like the pbutter flavor of these.

Other one: Magic Cookie Bars! My mom allllways made this at Christmas, and they're so easy. Melt a stick of butter in a 13x9 (inch) glass pan @ 375*F - evenly sprinkle with a cup and a half of graham cracker crumbs, pour on a 14 oz can of sweetened condensed milk - top with a cuppa semi-sweet chocolate chips, about half a bag of sweetened coconut flakes (and you can also add chopped walnuts which I do not 'cause I don' like'em) - press the chips & flakes lightly down - bake for 'bout 25-30 min til the coconut is goldeny toasted. Cool (you can refridge if you like) and cut into bars.

SAD thing is - AGAIN! none of these are for us - this was my PTSA baking for today's teacher & staff SweetTreat day @ youngest's school <3

This tier has more "homey" cookies, however, their all taste spectacular. Drop cookies such as the various chocolate chips cookies featured here are one of the easiest cookies to make. Once you acquired a small ice-cream scoop, portioning the dough is simple. The key to perfectly shaped drop cookies is to know the dough. Some dough does not spread very well in the oven so I would give them a little help by flattening the little balls of dough into thick rounds. Others are less finicky and will spread to a nice round circle in the oven.

Squares are also great options for holiday baking because one batch can yield many pieces without too much work. The only trick is to have good cutting technique. Cutting the slab into tiny portions of equal size takes a little practice but well worth the effort.
