my third ever attempt at roast beef makery. Turned out pretty tasty, but tips for roast beef #4:

1) cook the roast immediately after purchase instead of letting it sit in the fridge a week; don't let it sit for several hours while you are at the gym, like I did. It should only be out for about 1-2 hours to warm up to room temperature.

2) don't slit the top so deep.. makes slicing it more difficult when it's cooked. Next time, stab holes and push garlic slices into them instead.

3) use fewer celery seeds.. they are quite annoying to brush off; rub roast evenly with olive oil

4) and above all, don't rush when preparing the meat. Taking a few extra minutes to prepare the meat before roasting will ensure better results. I forgot to elevate the meat on a wire rack for the first 30 mins of cooking.

I cooked dinner for Mel & Barend tonight. Roast beef, potatoes roasted in goose fat, potatoes boiled in lemon, white wine and spice; green beans in cinnamon and mustard, white rice and gravy. Mel has a thing about meat - it has to be quite dead! So, my normal cooking time of 40 minutes turned into almost 2 hours. She got her wish - no blood, no pink, but the meat was a little tougher as a result. I sustained several first-degree burns achieving the "well-done" state, and will be flying to Switzerland in the mornign for recuperative plastic surgery....
