I made these gingerbread cookies for some friends. I thought about spending $20 on a cookie cutter on eBay but what am I kidding, I don't need a cookie cutter. Anyway, here are my Hello Kitty cookies made with all my love. The next time I am not using a gel for the eyes, nose and whiskers. I'm going to have to find another chocolate liner... Maybe some M&Ms....

I also need to say that I am sure I won't go crazy with the contrasts anymore... The last couple of days have just been a little blah and my mood reflects in my shadows.

'Gingerbread' cookies on a glass plate. (actually a candle drip catch.) The mug we found in the dirt out at the homestead on Anderson Island. I wonder if my great grandfather's sister used to play with it.

Prepare filling:
1/2-ish cup smoked mushrooms, finely diced
1/4-ish cup dried cherries, finely diced
1/4-ish cup pine nuts
1/8-ish cup pitted kalamata olives, finely diced
1/4-ish cup red peppers, finely diced
1/8-ish cup garlic, minced
pat of butter

Mix everything together in bowl, refrigerate.

Porky goodness:
Two medium sized loin chops 1" thick, brined for 2 hours in fridge
6 strips bacon
cotton string

Trim fat from and butterfly chops out to 1/8" to 1/4" thick, one butterflied "wide" one "narrow". Roll butterflied pork chops between plastic wrap or tinfoil with a rolling pin to a uniform thickness. Yes it would've been easier to just have larger piece of pork loin to flay open but all I had on hand were these.

Place filling mixture on wide chop spreading it edge to edge, pressing it into the meat. Roll up filling laden chop into a tight long roll, take remaining "narrow" chop and wrap it longitudinally around rolled "wide" chop with filling being sure to cover exposed ends.

Lay bacon out on plastic wrap or tinfoil in overlapping strips, as if you're siding a house with tasty bacon, place another piece of plastic or foil on top and roll out with rolling pin forming bacon together into a "mat" that will be used to wrap the rolled up pork loin.

Wrap said loin log with the bacon and then tie up with cotton string so it won't unwrap itself while cooking (this step isn't strictly needed if you're pretty ginger with how you handle the loin and you don't let it get too warm before you move it around before cooking)

Roast on roasting pan or rack in oven (I'd suggest 400F) or put on the bbq like I did this time, be sure to use indirect heat or else your bacon wrapping will catch on fire. Cook until internal temp is ~135F, take out of heat and let rest before cutting string off before serving.

This is my cranberry stuffing in pork chops. The recipe is silly easy.

Make your favourite stuffing recipe, and add dried cranberries to it. Set aside. Cut enough 1"-2" by 1/2" citrus wedges (I used lemons, but you could use oranges if you like). Set aside.

Slit a 1" cut into each pork chop along a side. Use a boning knife or something similar to create a long, deep pocket that's about 1" from the walls.

Using your fingers, scoop of some of the stuffing and shove it down each cavity till they're almost full. Leave enough room to place some citrus wedges in the holes as plugs so the stuffing doesn't fall or seep out as they're being handled and cooked.

Season both sides of each pork chop with sea salt and freshly cracked pepper.

Heat up a skillet till it's good and hot, add some olive oil and place a few pork chops in at a time to sear. When you have a lovely caramel colour on the first side, flip them over to sear the second side. (Each side can take 3-5 mins - depending on how thick your chops are.)

Remove the chops and place on a baking sheet, drizzle the the tops with a bit of olive oil and cook in a pre-heated 425 degree oven for 35-40 mins.

It was an “unusual Sunday…!!
Yes I waked up very late in the morning...
And again after lunch I had a very good sleep…
(Thanks to my wife ... she was away from home… haa haa!!!)
Okay... here is the reason…
Its almost 3 years my daughter was very busy to finish her studies…
Now she is planning to do her ENGIENERING course..
Being a Sunday she cleaned up her wardrobes..
She found some interesting “cookery books”...
AND she asked me how about the cooking DAD??
I said.. Yes last week I paid my yearly premium to my “LIFE INSURANCE”..
SO don’t worry.. Your mother will get the whole money..
And I asked my son too join the party and asked further to help his sister to make the cooking easy..
And the “venture starts exactly at 10 clock from the kitchen …
And I want to extent my help also but simply my Son and Daughter refused and asked me to watch TV… and as a good father I obliged…
In 2 hours time there was an absolutely fun moment in the kitchen and the grandma simply watching the whole drama from the dining hall..
They refused the grandmas help too… but once in a while they discussed about the ongoing, thrilling cooking …
AND finally the lunch time bell was rang in my stomach…
Every thing presented perfectly on the table.. But I asked her to why don’t we sit on the floor and have our lunch?
And every body sat on the floor and no talking..
There was a fight between hand and mouth…
In minutes all the food vessels have been empty…
But my stomach was filled more happiness than the food…
Some times we don’t know how the children shocking you..
It all depends how YOU behave with them…!!!
Here the rice named “chicken fried rice” and the other dish she prepared a simple “lake fish” fry….. And garnished…!!!
And now you know the reason why I had a noon sleep!!!!

I made some chicken curry last weekend, and here's the recipe: (I didn't have some stuff and used some substitutes instead)

2 tbsp of Canola oil
1/2 tsp. cloves (Didn't have any of these :) )
4 green or white cardamom pods (I didn't use any though)
2 fresh or dried bay leaves
2 cinnamon sticks
4 medium-size cloves of garlic, finely chopped
2 slices of ginger (2 tsp of ginger)
1 large tomato, cored and finely chopped.
2 tsps of garam masala
1 tsp of salt
1 1/2 pounds of chicken thighs cut into 1-inch pieces
(thighs taste better, but I used chicken breasts insteada - lower in fat)
1/2 cup of chicken broth
4 tbps of heavy whipping cream
2 tbps of fresh, finely chopped cilantro leaves and some tender sprigs for garnishing

optional:
1 large onion finely chopped (I just wanted some extra flavour)
4 hard boiled eggs (my addition, ofcourse :) )

Here's how you make it:
1. Heat the oil in a medium skillet, and fry the cloves, cardamom, bay leaves and cinnamon sticks until light brown (1-2 mins)
2. Add the onions, and fry until golden brown.
3. Add the tomatoes, ginger, garlic, garam masala and salt. Cook until tomatoes are done, but still firm to touch. (3 to 5 mins)
4. Stir in the chicken and the broth. Bring the curry to a boil and let it simmer until the chicken is done. (10 - 15 mins). Remember not to overcook the chicken breast, since it becomes quite rubbery and hard.
5. Fold in the cream, and stir to blend the cream in. Make small incisions in the hard boiled eggs and add them to the curry, and roll over the sauce. Cover and allow the curry to warm up again. Be careful not to overcook after the cream, since you don't want the fat in the cream to separate.
6. Serve the curry with the eggs over a bed of steaming white basmati rice.
